Ingredients:
2 cans (12.5 oz) chunk chicken - do not drain
2 cans (14.5 oz) diced tomatoes
3 cans (4 oz chopped green chilies
1 can (14.5 chicken broth
1 can (10 oz red enchilada sauce
1 can (10 oz green enchilada sauce (Verde)
1 can (15 oz black beans-drained and rinsed
2 cans (15 oz whole kernal corn drained
1 medium onion chopped
1 medium to large zucchini diced
1 teaspoon garlic powder
Tortilla chips
Shredded cheese
Optional spices -1 teaspoon cumin, 1 teaspoon chili powder, 3/4 teaspoon pepper, and 1 teaspoon salt. Add to taste.
Directions:
combine all ingredients, except tortilla chips and cheese, in 6 quart crock pot. cover and cook on low for 8 hours. Serve with tortilla chips and shredded cheese.
