Eggnogg Ice Cream

Ingredients:

1 qt eggnog
2 1/2 cups half om half
1/3 cup sugar
1 teaspoon vanilla
2-3 teaspoons cinnamon
dash of nutmeg
dash of cloves

Directions:

Mix all ingredients together with a whisk until sugar is dissolved.
Freeze following the directions for your ice cream maker.

Cinnamon Nut Twists Taste of Home 5-Ingredient Cookbook

Ingredients:

2 tubes (8 ounces each refrigerated reduced fat crescent rolls) (We did not twist the dough into knots)
2 tablespoons reduced fat stick margarine
1 1/4 cup packed brown sugar
1 tablespoon ground cinnamon
1/3 cup finely chopped walnuts

Directions:

Unroll both tubes of dough; press perforations and seams together to form two rectangles. Spread with margarine Combine brown sugar and cinnamon sprinkle over dough
Fold each rectangle in half starting from the short side Cut each into eight strips Place on ungreased baking sheet bake at 375 for 10-12 minutes or until golden brown. serve warm

Microwave Mac'N'Cheese Quick Cooking September 1999

Ingredients:

2 cups uncooked elbow macaroni
2 cups hot water
2 tablespoons butter or margarine
1/4 teaspoon onion powder
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/3 cup all-purpose flour
11/2 cups milk
2 cups shredded cheese

Directions:

In a 2 qt microwave-safe dish, combine the first seven ingredients. Cover and microwave on high for 3/12 minutes stir Cover and cook at 50% power for 4 minutes or until mixture comes to a boil, rotating a half turn once. Combine flour and milk until smooth; stir into macaroni mixture. Add cheese Cover and cook on high for 6-8 minutes or until the macaroni is tender and sauce is bubbly rotating a half turn once and stirring every 3 minutes.

This recipe was easy to make in the microwave and the mustard added a lot of flavor.

Black Bean and Mango Salsa - Our Best Bites

Ingredients:

1 (15.5-ounce can black beans, rinsed and drained
1 medium mango, peeled and diced (about 1 cup)
1/2 cup diced red onion (about 1/2 medium onion)
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 teaspoons red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 medium avocado, diced

Directions:

1. In a large bowl combine the black beans, mango, red onion, and cilantro.
2. In a small bowl combine lime juice, vinegar, sugar, garlic powder, salt, and pepper. Stir to dissolve the sugar and then pour over black bean mixture. Cover and chill in the refrigerator for at least an hour.
3. When ready to serve, gently fold in avocado. Season with additional salt and pepper to taste.

We served this Salsa on Tourteas when the missionary's came and they enjoyed it
I also enjoyed it to I enjoyed the chopped fresh cilantro and the fresh lime juice.

Grill Bread Pizza

Ingredients:

2 cups very warm water
1 Tablespoon yeast
3 cups flour

Directions:

Mix well to make sponge. Let rest for 20 minutes
Add to sponge
2 tablespoons salt
1/4 cup melted margarine or oil
Enough flour to make a very stiff dough
Knead flour until smooth.
Shape dough into pizza rounds. Grill on George Foreman Grill.
Add desired toppings then put in microwave for one minute.













This is a easy alternative to making pizza with an oven.  It won't heat up the whole house and you can say that you ate a whole pizza.

Dessert Pizza



We also made a dessert pizza.  We just used what was around.  We used Nutella for the sauce.  we used various fruits as well as shredded coconut and sprinkled some cinnamon on top.


The Nutella and Fruit mixed very well.  The Coconut and cinnamon were a nice addition.

Milk Chocolate Peanut Butter Balls

Ingredients:

1 cup confectioners' sugar
1/2 cup peanut butter
3 tablespoons butter, softened
1 pound milk chocolate

Directions:

1. In a mixing bowl, combine sugar peanut butter and butter mix well.
2. Shape into 1 inch balls and place on a waxed paper lined cookie sheet
3. Chill for 30 minutes or until firm.

4. Meanwhile melt the chocolate coating in a double boiler or microwave safe bowl.
5. Dip balls and place on waxed paper to harden.

Cinamon Apple Bundt Cake Cooks.com

Ingredients:

1 (18 oz) pkg yellow cake mix
1 (3/4 pkg instant vanillia pudding
1 can apple pie slices, drained thoroughly
1 cup water
4 eggs
1/2 cup finally chopped pecans or walnuts
1/4 cup Domino sugar and cinnamon

Directions:

Wipe a 10 inch bundt pan well with shortening or oil.
Sprinkle with nuts (optional)
Set Aside
Combine cake mix 1/3 cup vegetable oil or peanut oil and eggs beating for 2 minutes at medium speed
Pour 1/3 batter into prepared pan sprinkle 2 tablespoons sugar and cinnamon over batter.



This Cake was very good with the yellow cake mix.  I also liked the powdered sugar glaze.
I couldn't stop eating this cake.

Lemon Bundt Cake Elizabeth Maynes Recipe

Cake
Ingredients:

1 box white cake mix
1 box instant lemon pudding
3 eggs
3/4 cup oil
1 cup sprite

Glaze
Ingredients:

lemon juice
powdered sugar

Directions:

Mix cake mix, pudding mix, eggs, oil, and sprite together.
Be sure to mix it well or you will have lumps.
Cook in a bundt pan for 30 minutes.
Whisk lemon juice and powdered sugar together to make the glaze.
Wait until the cake is cooled off to put the glaze on.













This cake was very good and I would like to make it again.  It was nice and moist especially with the glaze on top.

Carmel Apples

I got this from Orson Gigi's Blog
Wash and scrub apples with warm water and a bit of mild soap. Then rinse and dry very well so that the Carmel will stick to the apples. Insert the skewers into the core of the apple. Refrigerate apples for at least an hour. Cut off about 1/4 of the carmel loaf and melt in a microwave safe bowl or in a saucepan on the stove. Dip apples in the carmel slowely turning them Allow to set up for an hour or more. Apples can be refrigerated after dipping in carmel to speed up the process.

Things I did different
  • I started with cold apples so I didn't refriderate for one hour
  • I used a glass messuring cup because the sides were narrow and easy for dipping
  • When melting the carmel I had the power on the microwave set to 50% instead of 100%
  • After dipping I held the carmel apple upside down so the carmel dripped towards the stick
  • Once the apples were set up I dipped them in chocolate and decorated them with nuts and crushed candy canes.
  • They turned out really good and I enjoyed doing it

Cream Puffs Our Best Bites

1/2 cup water
1/4 cup butter
1/6 teaspoon salt
1/2 cup flour
2 eggs
1 recipe easy chocolate Mouse see page 234 for recipe
1. Preheat oven to 4000 degrees F.
2. In a medium saucepan combine water, butter, and salt and bring to a boil. Remove from heat and add flour all at once. Stir quickly with a spoon until dough forms a ball.
3. Add one egg at a time combining completely after each edition. The mixture will be very smooth and velvety.
4. Either drop the dough by scant teaspoons or spoon dough into a pastry bag and pipe it directly onto an ungreased baking sheet. Teaspoons seem small but the pastry will puff up and still be bite-sized.
5. Bake for 20-25 minutes or until golden brown. Remove from oven, allow to cool for a few minutes, and then transfer to a wire rack to cool completely.
6, While the pastry is baking prepare the lemon pudding.
7. When the lemon pudding has chilled and the puffs have cool fill a bag with the lemon pudding
8. Sprinkle with powdered sugar or dip the top in lemon pudding and refrigerate until ready to serve. Makes about 40 bite sized cream puffs.

Rocky Road Ice Cream

2 boxes  Instant chocolate pudding
2 cups whip cream
3 cups milk
1/2 cups brown sugar
1/2 cups white sugar
1 cup toasted walnuts
2 cups marshmellows



Mix the pudding, whipped cream, the milk, brown sugar and white sugar together put it in the ice cream maker and freeze it fold in the marshmellows and the walnuts and place in freezer for 14 hours. It was very creamy and the brown sugar added a nice touch to the icecream.
