Mini Puffed Oven Pancakes

I saw this recipe in Savoring the Seasons with Our Best Bites.

Ingredients:

 1/2 cup flour
3/4 cup milk
2 large eggs
1/8 teaspoon salt


Directions:

1. The first thing you have to do is put the muffin pans in a 400 degree oven to get ready to cook. While it is heating you get all the ingredents ready by mixing the ingredents in the blender.

2. We then pulled the hot muffin tins out of the oven. We sprayed the hot muffin tins with cooking spray.  Then filled the muffin tins three quarters of the way with the batter.

3. It takes 12 to 18 minutes to cook. They need to look puffy and have lots of air in them and golden brown on the edges. We served them warm with maple syrup and butter. Other options to serve it with are with any jam, lemon and powdered sugar, frozen fruits and whipped cream

Liz's Gingerbread Cookies Gwen Williams

Ingredients:

1 cup molasses
1 cup sugar
1 cup margarine
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ginger
1 tablespoon ground cloves
1 teaspoon ground cinnamon
5 cups flour


Directions:

Cream molasses, sugar and margarine cook until bottoms are brown

Eggnogg Ice Cream

Ingredients:

1 qt eggnog
2 1/2 cups half om half
1/3 cup sugar
1 teaspoon vanilla
2-3 teaspoons cinnamon
dash of nutmeg
dash of cloves

Directions:

Mix all ingredients together with a whisk until sugar is dissolved.
Freeze following the directions for your ice cream maker.

Cinnamon Nut Twists Taste of Home 5-Ingredient Cookbook

Ingredients:

2 tubes (8 ounces each refrigerated reduced fat crescent rolls) (We did not twist the dough into knots)
2 tablespoons reduced fat stick margarine
1 1/4 cup packed brown sugar
1 tablespoon ground cinnamon
1/3 cup finely chopped walnuts

Directions:

Unroll both tubes of dough; press perforations and seams together to form two rectangles. Spread with margarine Combine brown sugar and cinnamon sprinkle over dough
Fold each rectangle in half starting from the short side Cut each into eight strips Place on ungreased baking sheet bake at 375 for 10-12 minutes or until golden brown. serve warm

Microwave Mac'N'Cheese Quick Cooking September 1999

Ingredients:

2 cups uncooked elbow macaroni
2 cups hot water
2 tablespoons butter or margarine
1/4 teaspoon onion powder
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon ground mustard
1/3 cup all-purpose flour
11/2 cups milk
2 cups shredded cheese

Directions:

In a 2 qt microwave-safe dish, combine the first seven ingredients. Cover and microwave on high for 3/12 minutes stir Cover and cook at 50% power for 4 minutes or until mixture comes to a boil, rotating a half turn once. Combine flour and milk until smooth; stir into macaroni mixture. Add cheese Cover and cook on high for 6-8 minutes or until the macaroni is tender and sauce is bubbly rotating a half turn once and stirring every 3 minutes.

This recipe was easy to make in the microwave and the mustard added a lot of flavor.

Black Bean and Mango Salsa - Our Best Bites

Ingredients:

1 (15.5-ounce can black beans, rinsed and drained
1 medium mango, peeled and diced (about 1 cup)
1/2 cup diced red onion (about 1/2 medium onion)
1/2 cup chopped fresh cilantro
2 tablespoons fresh lime juice
2 teaspoons red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 medium avocado, diced

Directions:

1. In a large bowl combine the black beans, mango, red onion, and cilantro.
2. In a small bowl combine lime juice, vinegar, sugar, garlic powder, salt, and pepper. Stir to dissolve the sugar and then pour over black bean mixture. Cover and chill in the refrigerator for at least an hour.
3. When ready to serve, gently fold in avocado. Season with additional salt and pepper to taste.

We served this Salsa on Tourteas when the missionary's came and they enjoyed it
I also enjoyed it to I enjoyed the chopped fresh cilantro and the fresh lime juice.

Grill Bread Pizza

Ingredients:

2 cups very warm water
1 Tablespoon yeast
3 cups flour

Directions:

Mix well to make sponge. Let rest for 20 minutes
Add to sponge
2 tablespoons salt
1/4 cup melted margarine or oil
Enough flour to make a very stiff dough
Knead flour until smooth.
Shape dough into pizza rounds. Grill on George Foreman Grill.
Add desired toppings then put in microwave for one minute.













This is a easy alternative to making pizza with an oven.  It won't heat up the whole house and you can say that you ate a whole pizza.

Dessert Pizza



We also made a dessert pizza.  We just used what was around.  We used Nutella for the sauce.  we used various fruits as well as shredded coconut and sprinkled some cinnamon on top.


The Nutella and Fruit mixed very well.  The Coconut and cinnamon were a nice addition.
